The Strawberry Leaf - this is a cocktail that I came up with when I was just messing around with some flavours and clarification one day. Long story short it’s a variation of a clarified strawberry daiquiri milk with a lemon peel and basil foam. . For the cocktail: 200ml Havana Club 3 175ml strawberry puree 175ml lime juice 150ml simple syrup . For the foam: 2 whole lemon peels 50ml lemon juice 2 egg whites (or alternative) 1/4 teaspoon xanthan gum 1 large basil sprig 75ml simple syrup . #cockta
